Direct pressing, spontaneous fermentation, and around 18 months of aging on fine lees in underground glass tile lined tanks without batonnage the wine is built on tension, not weight. This is Muscadet at its most serious: high end, age worthy, and a benchmark for what the appellation can do in the hands of a great vigneron.
